Every lot is cupped rigorously. Only coffees scoring 85+ with clarity, structure, and distinct character move forward. 90+ microlots are reserved in limited allocation.
We develop each coffee to preserve its origin expression — minimizing roasty imprint while maximizing articulation, sweetness, and structural clarity.
Each batch is evaluated and hand sorted to remove defects. Only clean, expressive lots reach our shelves.
Extraction evolves with roast age. We adjust grind, agitation, and temperature to preserve peak expression — always aligned with the most relevant brewing standards.
